Bartending is more then a profession it is an art.

This is a complete guide on every aspect of Bartending.

Bartenders also usually serve as the public image of the bar they tend, contributing to as well as reflecting the atmosphere of the bar. In some, a establishments focused strictly on the food, this can mean the bartender is all but invisible. On the other extreme, some establishments make the bartender part of the entertainment, expected perhaps to engage in flair bartending or other forms of entertainment such as those exemplified in films such as Coyote Ugly. Some bars might be known for bartenders which serve the drinks and otherwise let a patron alone, while others want their bartenders to be good listeners and offer counseling (or a "shoulder to cry on") as required. Good bartenders help provide a steady clientele by remembering the favored drinks of regulars, having recommendations on hand for local nightlife beyond the bar, or other unofficial duties. They are sometimes called upon for answers to a wide variety of questions on topics such as sports trivia, directions, or the marital status of other patrons.

How Bars Are Set Up

Your bar is normally broken down into three sections:

1. The first is your "TOP BAR". The front top portion of the bar is known as the "counter". The back portion of the counter is known as the "rack" or "rail". All drinks are mixed in the rack or rail then served to the customer. Mixing on the rail displays a touch of showmanship while allowing the customer the opportunity to view proper measurements and ingredients.

2. The Second is your "UNDER BAR". The under bar is located behind the bar and contains your sinks, drainboards, ice bins, and other necessary equipment to properly prepare your drinks. This is were your most frequently poured liquors are stored in areas known as the "speed rack" and the "house well". The major percentage of all your drinks will be made in the areas of the bar.

3. The third is your "BACK BAR". The back bar accommodates your glassware and stock reserve. If your place of employment does not have a "speed rack" or "house well" section, the house liquors are usually stored in the upper and lower portion of the back bar. The back bar items are grouped together according to name brands such as scotch, Rye, Bourbon, Vodka, Gin, Rum, Brandy, Tequila, and Cordials.

STANDARD GARNISHES: olives, onions, cherries, lemon twist, lime, orange slices, pineapple

Fruit is not only decoration, but it affects the taste of the drink if presented properly. Lemons and oranges give more juice if you soak them in warm water. Fruit should be covered with a damp napkin and refrigerated if left over night. Generally fruit that is cut will not last longer then a day or so. An unattractive garnish will reflect on the quality of your drinks. The drinks must look good as well as taste good!

Lemon:
Twisting a lemon skin properly imparts an incredible taste difference with such drinks as perfects, champagne cocktails, and spritzers. A twist is a small strip of peel that is twisted over the glass to release the aromatic oils. Its is then dropped into the drink. The secret to twisting a lemon is to grasp the peel with your thumb and index finger of your left hand holding the pores or yellow side down directly over the drink, then with your right hand, a combination of twisting and squeezing the oils from the pores of the lemon skin. Using the twist on the rim of the glass will add a bit of showmanship.

Lime:
It is important to get as many good size pieces of lime as possible. You should get an average of sixteen wedges per lime. When squeezing a wedge of lime, you should have one hand shielding in front of the lime, to prevent lime juice from squirting onto the people/customer in front of you. The lime piece is used to moisten the rim of the glass in such drinks as the Margarita, Side Car, and Salty Dog so that the salt and sugar will adhere to the rim of the glass.

Orange:
Orange slices should be cut about 1/4 inch thick as slices that are to thin will be flimsy and slices to thick are not economical. Orange slices are combined with cherries on many drinks. The combination is nick-named "garbage".

Bartender's Glassware

Rocks – also known as lowball and old fashioned glass. This is an extremely versatile glass and is a must have in a bar. In fact I have seen some bars that only carry Rocks and Highballs. Most commonly you will find Double Rocks glasses in public bars, which holds 8 to 10 ounces. I would recommend the use of the traditional Rocks glass size of 5 or 6 ounces at home and use the Highball glass for the taller drinks.




Highball – this essential piece of glassware looks like a taller version of the Rocks glass. This glass is used for most of your tall drinks that use juices and mixers. It is typically between 8 to 12 ounces.








White Wine – the white wine glass is actually a very versatile piece of glass. In a pinch it can used in place of the Cocktail, Cordial, Shot, Red Wine, Flute, Sour, and Snifter. There is a wide variety of sizes in this glass, but I recommend a smaller size.








Cocktail – is the icon glass of mixed drinks. (THIS IS NOT A MARTINI GLASS. There is no such glass called a Martini glass. The Martini is a drink with Gin and Dry Vermouth not a glass). The Cocktail glass can not really be used in place of any other glass, but many, many drinks are served in it. The straight v-shape of the glass also is the bane of all waiters and waitresses existence. Serving a full Cocktail glass to a guest can be a tricky proposition. So when pouring into a Cocktail glass don’t fill it to the top. Leave about a quarter to a third of the glass exposed. There is a large range of sizes in this glass. Most restaurant bars serve in gigantic Cocktail glasses. I hate this. You pay a ton of money for it and by the time you get halfway done your drink is warm. A 6 ounce Cocktail glass is the perfect size.

Cordial – think shot glass with a stem. I put the Cordial higher on the list because it can be used as a shot glass rather easily. Just don’t get those really frilly looking ones that are multi-colors and multi-sizes. A Cordial glass is about 1.5 to 2 ounces in size.

Beer Mug – the typical mug with a handle can be used for beer, all beer based cocktails, most frozen cocktails, and coffee based cocktails. Beer Mugs usually hold about 12 to 16 ounces.










Shot – the shooter is a popular drink type and the Shot glass is made for it. The Shot glass can be short and squat or taller and skinny, but at most it holds about 2 ounces. Mostly straight liquors or liqueurs are served in it.








Red Wine – the larger bowl allows red wine to breathe more and express its aroma. In a pinch the Red Wine glass can be used in the same way as the White Wine glass. This glass also comes in many different sizes. I would recommend a slightly larger size than your White Wine glass.







Sour – now we are starting to get into the specialty glassware. The Sour glass is a shorter more pointed shaped White Wine glass. This glass is specifically used for the Sours family of cocktails (Whisky Sour, Amaretto Sour, etc…). In a pinch this glass can be used in the same way as the White Wine glass.

Snifter – the Snifter, sometimes called a Brandy Snifter, has a very large bowl and is a fairly short glass. This glass is used for sipping aged liquor. The large bowl allows the liquor to breathe, but then it’s smaller at the top to concentrate the aroma to the nose when you are sipping. Only a small amount of liquor is poured into a Snifter. Because they are all different sizes the best way to fill a Snifter is to lay it on its side and pour the liquor in until it is just about to spill out of the glass. Once you set it straight you will have the perfect amount poured. The Snifter can also be used to serve some dessert cocktails. This glass is a pain to store and an even bigger pain to clean.

Margarita – the concoction that goes in this type of glass is obvious. It has a festive style curve to it that just screams tequila. Beyond the Margarita this glass can be used for just about any frozen cocktail.









Hurricane – this specialty glass was put into popular use by Pat O’Brian’s in New Orleans serving up their Hurricane cocktail of the same name. As the story goes the owner of the bar was given a case or two of these very strange glasses and he challenged his bartenders to develop a drink to serve in it. As it turned out the drink and the glass were a hit. Any frozen or tropical cocktail can be served in this glass but it does hold quite a lot of liquid.





Collins – is the slender cousin to the Highball glass. If you have Highball glasses the only reason to get this particular glass is to be able to serve authentic Tom Collins or other Collins cocktails. As described earlier whatever beverage is served in this glass is intended to have a straw in it with aromatic garnishes. It is popular to serve the Mojito in this glass as well.






FluteFlute – is for the bubbly. The slender shape is intended to concentrate the bubbles that come from Champagne. This glass is good for any Champagne based cocktail, but not much else.










Parfait/Pousse-Café – these two glasses look fairly similar and are used for layered cocktails and dessert cocktails. These glasses have square bases, short stems and a narrow bowl.

Coffee – is not a coffee cup. This glass looks similar to a Parfait or Pousse-Café but it has a handle on it as well. As you can imagine this glass is used for coffee based cocktails.

Pilsner – is basically a large glass specifically used to hold beer. It has a very short stem and a v-shaped bowl that is very tall. If you plan on serving higher quality lagers or ales you may want to invest in a set of these. Otherwise don’t bother.

How Drinks Are Made

How To Serve On The Rocks: Pour drink onto ice into the rock glass, garnish, and serve along with a napkin.

How To Serve Straight Up: Pour drink onto ice in a mixing glass, stir 6 - 11 times, strain and pour in a stemmed glass, garnish, and serve along with a napkin.

How To Make A HighBall: Fill Hi-Ball glass with ice, fill with requested liquor, add the requested mix, garnish, insert stir rod, and serve along with a napkin.

How To Make A Shooter: "Shooter" means - any drink chilled over ice, shaken, and then served by itself in a shot glass, cordial or rock glass. The measurements can vary from 1/8 to 5/8 oz on each spirit used in the shooter.

When To Stir Your Drinks: Drinks which contain clear liquors and ingredients will require stirring with ice for proper mixing. Stir drinks which contain a carbonated mixer (Club Soda, Tonic, Ginger Ale, Cola, ect.) gently to maintain the sparkle and effervescence. Remember, too little stirring fails to mix or cool the ingredients, and too much stirring can melt the ice and dilute the drink.

When To Shake Your Drinks: Drinks that contain fruit juices, sugar, eggs, cream or other ingredients difficult to mix should be shaken. For thorough blending of some punched, sours, and other fruit drinks and egg drinks, and where frothiness is needed, use an electric mixer or blender to gain that appearance.

How To Hand Shake Your Drinks: Place you mixing glass flat, and fill half way with ice cubes. Next, pour juices into the glass, then the liquor. Place shaker on the mixing glass, tap tight and shake 7 -12 times. Twist and tap glass from shaker and strain or pour the contents into the proper glass.

Learning To Pour

1. When you pick up a liquor bottle, hold it by the neck, wrapping your index finger around the base of the pour spout. This will give you maximum control of the bottle, allowing you to direct the liquor stream, and will prevent the occurrence of having the pour spout slip out of the bottle.

2. As you pour keep the bottle just slightly off vertical. Tilting the the bottle more then this, inhibits the steady flow which is vitally important to proper pouring technique.

3. You will need to develop a "count" for measuring your pour. Every type of pour spout has its own rate of flow.

4. The best count is one which gives you a count of four for a one ounce measure. Here is a reliable way to test this:

Use a shot glass that is one ounce (a lined shot glass is perfect, the line is always one ounce)
Pour from the bottle into the shot glass and count. Experiment with counting until you can use a four count for one ounce of liquor. Try a faster or slower count if necessary.

Once you learn to pour to a count of four, you can easily judge the measurements. if four is 1oz., two is 1/2oz, ect.

5. To stop a pour, drop the bottom of the bottle and, in the same motion, twist the pour spout towards you. making sure each shot is poured with a finishing snap of the wrist will knock the liquor back down and avoid dripping.

Martinis & Manhattans

Highball Drinks

All drinks that contain 1 oz. of liquor are to be served in a Hiball glass. If the drink calls for more than 1 oz. of liquor it should be served in a Tall glass. If a customer orders a drink that would usually be served in a Hiball glass, but they request it as Tall (Tall Rum and Coke, Tall Screwdriver, ect.). The drink gets the same amount of liquor, but is filled with more mixer.

Shooters

Shooters are shots, usually consisting of more then one liquor or mixer. For the chilled shots the ingredients are first shaken in a shaker glass with ice, then strained into a shot glass (usually 1 oz. of each liquor and filled with mixer makes 5-6 shots), in order to keep it cold. Other shots are served in layers and not shaken, and others have special rules. I will only explain a few in detail, because their are so many, but you should get the overall idea.
